Cape Malay Beef Curry
A Cape Town classic — fragrant, gently spiced, and deeply comforting. Works beautifully with lamb too.

Method

Brown the beef in batches over high heat. Set aside.

Soften onions in the same pot until golden, about 10 minutes.

Add garlic, ginger and all spices. Bloom for 60 seconds.

Return beef, add tomatoes and 500 ml water.

Simmer gently, lid ajar, for 1.5 hours.

Add potatoes, cook 40 minutes more until tender.

Rest 15 minutes. Scatter with coriander, serve with rice or roti.
Butcher's tip
Great results start before the pan is hot: bring your meat to room temperature, pat it completely dry, and always rest it after cooking. The rest is as important as the sear.
